Raspberry Slaw with Raspberry Vinaigrette

Time 15 minutes
Ingredients
2 cups red cabbage, shredded
2 cups green cabbage, shredded
1 cup carrots, grated
1 bag raw baby spinach
1/3 cup pecans
½ cup feta, crumbled
2 punnets raspberries
Vinaigrette
1 punnet fresh raspberries
2 tbsp apple cider vinegar
1 tsp honey
½ tsp Dijon mustard
1 large garlic clove, microplaned
½ cup hemp oil
Salt & pepper
Raspberry butter
50g butter
½ cup raspberry, mashed
To serve
1 loaf crusty sourdough
Method
In a large salad bowl mix both cabbages, carrots and spinach.
Sprinkle with pecans, feta and raspberries.
In a blender blitz raspberries, apple cider vinegar, honey, Dijon mustard, garlic, hemp oil, salt and pepper.
Drizzle salad with vinaigrette.
In a bowl, use a fork to combine butter with raspberries.
Serve with crusty sourdough and raspberry butter.
