Raw Mango Pudding

Serves 4

Time 15 minutes + 2 hours chilling time

Ingredients

4 cups mango, cubed (very ripe)

½ can coconut milk

½ cup cashews, soaked overnight

⅓ cup dates

½ tsp vanilla essence

Juice 1 lime 

 

To serve

4 mint leaves 

1 lime, thin slice

Coconut flakes

Method

In a blender blitz mango, coconut milk, cashews, dates and vanilla essence until very smooth.

Run the mixture through a fine sieve to remove any bumps.

Pour the mixture into glass ramekins and chill for a minimum of 2 hours or overnight.

Serve with a sprig of mint, diced mango, coconut flakes and a drizzle of lime.
