Richo's Family Pizza

Serves make 1 tray

Time 20 minutes plus proving

Ingredients

Pizza Dough

4 cups plain flour, sifted

7g dried yeast

7g sugar

7g salt

½ cup extra virgin olive oil

½ cup warm water

Topping

½ salami, thinly sliced

½ red onion, thinly sliced

A handful of olive, rip apart

1-2 eggplant, diced and pan-fried with olive oil or baked 

2 to three cups of tomatoes, fresh tinned or passata

2-3 garlic cloves, chopped 

½ tsp dried oregano

Mozzarella cheese or cheese of your choice, grated

Method

Combine all pizza dough ingredients in the Magimix Cook Expert, select the “Pizza” function in the “Baking” section and press “start”. 

If you don’t have a Cook Expert, mix all ingredients in a bowl and knead for 5-10 minutes, then allow it to proof for 45 minutes to 1 hour until it’s doubled in size.

Brush the baking tray with olive oil. Stretch out the dough and place it on the tray. 

Push the dough to the side of the tray and allow it to rest and prove again for another 15 minutes.

Preheat the oven to 240°C. 

Top the dough with tomato first, then follow with all other topping ingredients. 

Place the cheese on top and put it in the oven for 25-35 minutes or until it’s golden brown.

Serve and enjoy.
