Roast Garlic Aioli

Serves 1-2

Time 25 minutes

Ingredients

6 cloves of garlic, peeled

1 egg yolk

1 tsp mustard

Squeeze of lemon juice

250ml extra virgin olive oil

Salt and pepper, as desired

Method

Preheat the oven to 180°C.

In a small baking dish, place garlic cloves and cover with olive oil. Season with salt and pepper then roast the garlic gloves in the oven for 20 minutes at 180 degrees until roasted.

Remove the roasted garlic cloves from the oven. Separate the cloves from the oil and drop the cloves into a food processor along with the egg yolk, mustard, salt and pepper.

Pulse until mixed then keep blending the ingredients while slowly drizzling the oil.

The combined ingredients will start to thicken and when you reach the desired consistency add the lemon juice and keep blending.

Store in the fridge in an airtight container.
