Salted Brownie Cookies

Serves 6

Time 40 minutes

Ingredients

150g salted dark chocolate

3 large eggs, room temperature

220g sugar

30 g unsweetened cocoa powder

1 tbsp oil

1 tbsp vanilla bean paste

150g plain flour  

1 teaspoon baking powder

100g salted dark chocolate

Method

Preheat the oven to 175°C.

Melt the dark chocolate until it’s a thin runny consistency.

Beat the eggs in a large bowl with the sugar.

Add the cocoa powder to the chocolate and mix through, then fold through the eggs.

Add the oil, vanilla bean paste, flour and baking powder and mix through until well combined.

Wait until the mixture has cooled and thickened slightly. Then add to a baking tray in scoops or balls, leaving enough space between them.

Add little squares of salted chocolate on top.

Bake in preheated oven for 11-12 minutes.
