Sesame Chicken Stir Fry

Serves 4

Time 30 minutes

Ingredients

500g of thigh fillets (skin off) diced 

1 tbsp extra virgin olive oil 

2 garlic cloves, minced

1 tsp sesame oil 

1 tbsp soy sauce

1 tsp chilli flakes

1 tbsp roasted sesame seeds

1 tsp of honey

1 can baby corn, rinsed and drained and cut in half

10 broccoli florets – aim for small/medium-sized

10 green beans, top, tailed and cut in half

Brown rice, to serve

Lime wedges, to serve

½ cup coriander, to serve

Method

Heat the olive oil in a frying pan. 

Add the garlic, allow it to become fragrant and then add the chicken – ensure browned all over. 

Add baby corn, broccoli and green beans and toss to combine.

After 2-3 minutes add the soy sauce, sesame oil and honey to the pan and allow to gently simmer for another 5 minutes. 

In a bowl place brown rice – top with the chicken and sprinkle toasted sesame seeds, chilli flakes and coriander on top to serve.
