Special Fried Spam with Rice Noodles

Ingredients
500g fresh rice noodles or 225g dried rice noodles
Sauce
2 tsp dark soy sauce
2 tbsp light soy sauce
1 tbsp hoisin sauce
1 tsp white pepper
1 tsp coconut sugar
1 tbsp rice wine
½ can spam, diced
1 onion, sliced
1 knob of ginger, cut into julienne
6 cloves garlic, sliced
4 Chinese sausages, sliced
1 cooked chicken breast, shredded
300g prawns
200g firm tofu, diced into cubes
1 tsp shrimp paste
3 eggs, lightly beaten
150g water chestnuts, sliced
1 cup bean sprouts
1 bunch garlic chives, finely chopped
1 bunch coriander, finely chopped
1 bunch spring onion, finely chopped
Salt and pepper
Extra virgin olive oil
Method
For dry rice noodles, pour hot water over the noodles for a couple of minutes and drain. Set aside.
In a bowl, add dark soy, light soy, hoisin, white pepper, rice wine and sugar. Mix to combine.
Heat a pan over high heat. Add the garlic, onion, ginger and spam with a splash of olive oil and stir. Then add the Chinese sausages, chicken, tofu, prawn and shrimp paste. Season with salt and pepper, stir and toss around. Cook for 1-2 minutes.
In the middle of the pan pour in the egg. Allow it to cook for 15 seconds then stir to break it.
Add the noodles, bean sprouts and water chestnut and toss to combine. Then add the garlic chives, coriander and spring onion.
Add ½ of the sauce and toss to combine. Taste to adjust. if too light, add more sauces but ensure it’s not too saucy.
Serve and enjoy.
