Sticky Cinnamon Buns

Serves 6

Ingredients

For the dough:

1¼ cups milk

⅓ cup sugar

⅓ cup butter

¾ tsp salt

1 egg

3½ cups self raising flour

1 tsp bicarbonate of soda

½ cup maple syrup

Pinch cinnamon 

 

For the filling:

⅓ cup butter melted

1 cup brown sugar

½ – 1 tbsp cinnamon, to taste

 

Coffee Glaze 

1 cup icing sugar

1 shot espresso 

 

Butter, to serve 

1 egg, beaten

Method

Preheat the oven to 200°C. 

Add self-raising flour, sugar, bicarbonate of soda, and cinnamon to a large bowl. Add butter, egg, maple syrup and milk and stir through. The mixture will be quite sticky, use your hands to bring the dough together. 

Dust a clean workbench with flour, pour the dough onto the board and knead until it comes together as a smooth dough. 

Gently roll the dough out to a large rectangle, about 1 cm in thickness. Spread the brown sugar, a good pinch of cinnamon and the sultanas evenly over the dough. Roll up the dough from the long side until you’ve got one long roll. Cut into 12 pieces, about 2-3cm thick. 

Line a tray with baking paper, and arrange the buns on the tray. Brush with egg wash and bake in the preheated oven for 25-30 minutes. Allow to cool for a few minutes in the tray before serving. 

Whisk all of the ingredients for the glaze, and set aside. Drizzle over the baked buns.
