Strawberry Shortcake Sundae

Ingredients
1 punnet strawberries
1 tsp corn flour
1 tbsp caster sugar
½ lemon, juiced
To Assemble
6 shortbread biscuits, slightly crushed
4 scoops vanilla gelati
100ml thickened cream
50g white chocolate
4 fresh strawberries
Method
First, make your compote. On medium heat, add your berries, sugar, flour, and lemon juice. Bring to a boil and reduce to a simmer for a few minutes until it’s a bright, vibrant colour and thick consistency.
Build your sundae by starting first with the shortbread, followed by compote, then ice cream 2 scoops and repeat again before finishing with more compote, thickened cream, fresh berries and white chocolate garnish.
