Stuffed Mushrooms

Serves 2-3

Time 20 minutes

Ingredients

1 block Vegan cheddar cheese, grated

3 large flat mushrooms

½ cup wilted spinach

2 tbsp pitted black kalamata olives, chopped

2 tbsp pesto 

Salt & pepper

Method

Preheat oven to 180°C on a fan grill setting.

Remove stalks from the mushrooms.

Layer the pesto at the bottom then top with wilted spinach and chopped olives.

Generously layer cheese on top. 

Bake/grill for 10-20 minutes, depending on your oven, or until cheese is golden and melted

Serve with salt and pepper on top.
