Super Quick Green Pea Soup

Serves 4

Time 10 minutes

Ingredients

1 tbsp extra virgin olive oil

1 leek, sliced

2 stalks celery, including leaves

2 cloves garlic, peeled & chopped

1L vegetable stock (x 2 veg stockpots diluted in 1L boiling water)

1 x 500g packet frozen green peas

¼ cup cream cheese or thick yoghurt

Method

Heat a large saucepan and drizzle with the oil. Sauté the leek and celery for a few minutes until softened, taking care not to brown. 

Add the garlic and sauté for a minute longer. Add the stock and bring to a simmer. Add the green peas and cook for a couple of minutes until piping hot. 

Stir through the cream cheese or yoghurt. Blitz in a blender or with a stick blender until smooth. Season to taste and serve.
