Thai Yellow Curry Marinated Chicken Wings

Serves 1-2

Time 30 minutes plus marinating

Ingredients

1kg chicken wings

2 tbsp yellow curry paste

1 long red chilli, roughly chopped

1 knob of ginger, peeled and finely chopped

3 shallots or onion, sliced 

3 garlic cloves, roughly chopped

1 bunch of coriander, roughly chopped 

2-3 spring onions, sliced 

Extra virgin olive oil 

Salt & pepper, to taste 

Method

In a large bowl, coat the chicken wings with curry paste, chilli, ginger, garlic, shallot, coriander, spring onion and a splash of olive oil. Season with salt and pepper. 

Cover and place in the fridge to marinade for an hour, or ideally overnight. 

Preheat the oven to 200°C.

Bake for 25 minutes or until cooked through.

Top with greens and serve.
