Tuna & Rice Filled Zucchini

Serves 2

Time 30 minutes

Ingredients

2 large zucchinis, cut lengthways with seeds spooned out

1 tin tuna

½ cup mayonnaise 

1 cup corn kernels

1 packet wholegrain basmati rice 

1 cup grated mozzarella

Zest of ½ lemon

1 garlic clove, minced

Extra virgin olive oil

Salt and pepper

Method

Preheat the oven to 200°C.

Place the halved zucchinis on a tray lined with baking paper – skin up. Drizzle olive oil and season with salt and pepper. Bake for 15 minutes until softened.

Meanwhile prepare the tuna filling by combining the tuna, mayonnaise, corn and rice.

Remove the zucchini halves from the oven and stuff the meat mixture into the zucchini, and serve.

*If time allows, top with grated mozzarella and put back in the oven for 6 minutes until the cheese melts and serve.
