Vegan Coconut Macaroons

Ingredients

3 cups desiccated coconut
⅓ cup slivered almonds
1 tbsp coconut oil
⅓ cup maple syrup
1 tsp vanilla paste
1 tsp baking powder
1/2 tsp salt

1 block vegan dark chocolate, melted

Method

Preheat the oven to 180°C.
In a food processor blitz desiccated coconut, almonds, coconut oil, maple syrup, vanilla, salt and baking powder for 30 seconds.
Use an ice cream scoop to place balls of mixture on a lined baking tray. Bake for 6-8 minutes or until golden brown.
Drizzle with melted vegan chocolate to serve.
