Vegetable Oat Pancakes

Serves 2

Time 30 minutes

Ingredients

2 tbsp extra virgin olive oil

2 garlic cloves

½ cup mushrooms, finely chopped 

½ cup carrots, grated 

1 bunch broccoli florets, blanched and cut into bite sized pieces 

1 cup rolled oats (blended into meal) 

½ cup oat milk 

1 tsp baking powder

Salt & pepper

1 egg, beaten

Method

Saute garlic and mushrooms with extra virgin olive oil in a frypan on medium heat until softened. 

In a large mixing bowl mix oats meal, baking powder and salt.

Add the blanched broccoli, mushrooms, onion, egg and oat milk and combine until resembling a thick batter. 

Heat a pan on medium and spoon mixture into a pan a half-cup full at a time. Fry on both sides until cooked through.
