Vegetarian Dream Salad

Serves 2

Time 10 minutes

Ingredients

2 veggie burgers 

100g green beans

100g snow peas

1 bunch Watercress

3 cooked beetroots, skin removed, roughly chopped

1 feta, cubed or crumbled 

1 bunch mint

 

Dressing

1 tbsp apple cider vinegar

1 tbsp wholegrain mustard 

1 lemon 

¼ cup extra virgin olive oil 

Salt & pepper

Method

Fry veggie burgers in a hot pan with a little extra virgin olive oil. 

Steam green beans and snow peas for 5 minutes. 

Add watercress and mint to a large bowl with feta and beetroot. Then toss in the green beans and snow peas. Tear up the veggie burgers into small bite-sized chunks. 

Mix all the dressing ingredients together and add to the salad. Toss through and serve.
