Vegetarian Panini
Serves 1
Time 15 minutes
Ingredients
1 panini, sliced in half
2 tbsp hummus
1/2 tomato, sliced
1 bunch of rocket
1/4 red onion
30g sundried tomato
30g red capsicum slices
20g feta, crumbled
20g mozzarella
Salt & pepper
1 tsp extra virgin olive oil
To serve

Method
Spread one side of bread slices with hummus, add tomato, rocket, red onion, sundried tomatoes, capsicum slices, feta and mozzarella. Season with salt and pepper and drizzle over a little extra virgin olive oil.
Add extra virgin olive oil to a hot grill pan. Toast panini for 2-3 minutes on each side, press down to flatten while it’s toasting.
