Veggie Packed Pizza Muffins
Serves make 12 muffins
Time 35 minutes
Ingredients
1½ cups self-raising flour
1 tsp baking powder
1 cup grated cheddar
1 grated zucchini, fluid squeezed out
1 cup pitted black kalamata olives
2 tbsp passata
1 egg
1 cup milk
A handful of basil, chopped
1 tbsp extra virgin olive oil
Pepper
Method
Preheat the oven to 180°C.
Mix all the above ingredients together and fill the mixture into pre-greased cupcake tin.
Bake for 30 minutes until golden.
Perfect for freezing, lunch boxes, toddlers.
