Whipped Fetta and Grilled Peach Toast

Ingredients
360g fetta
200g Greek yoghurt
4 tbsp lemon juice, plus extra for grilling peaches
3 tbsp extra virgin olive oil
2 fresh, ripe peaches
2 thick-cut slices of sourdough bread
2 tsp honey
2 tsp flaked almonds, toasted
Method
Make the whipped fetta by combining fetta, greek yoghurt, lemon juice and olive oil in a food processor and blitzing until smooth and creamy. Pour into a glass jar or container and set aside. Slice the peaches in quarters and remove the seed.
Drizzle with some extra virgin olive oil. Heat a grill plate or fry pan on high, drizzle with extra virgin olive oil if needed then add the peaches and cook 2-3 minutes each side, or until lightly golden and juicy.
When ready to serve, toast the sourdough, then generously spread whipped fetta over the toasted bread. Top with the grilled peaches and drizzle with honey. Top with some flaked almonds and tuck in.
