Wholemeal Roti with Pesto, Spinach & Chickpeas

Ingredients

¼ cup cooked chickpeas 

1 tbsp cottage cheese 

¼ cup baby spinach 

1 tsp good quality (fresh) pesto 

1 wholemeal Roti 

Method

Mix together chickpeas, cheese, baby spinach and pesto in a bowl. Heat a frypan on medium to high heat (no need to oil it). 

Add the frozen roti to the pan and cook 2 minutes on one side or until golden. 

Flip and then spoon the chickpea pesto mix into one side of the roti and fold the other half over the mixture. 

Cook another 1-2 minutes, remove from pan and tuck in.
