Apple Chopped Salad

Serves 4

Time 15 minutes

Ingredients

3 cups raw spinach 

3 cups broccolini, cut into bite-sized pieces 

2 tbsp mint leaves

2 tbsp parsley leaves

3 apples of your choice, diced 

½ cup dried cranberries

½ cup sunflower seeds, shelled

1 cup walnuts, chopped

1 cup pecans, whole 

½ cup gorgonzola cheese, crumbled

For the Vinaigrette
¼ cup apple cider vinegar
½ cup hemp oil
2 garlic cloves, microplaned minced
1 tbsp maple syrup
Salt & pepper

Method

Let broccolini sit in boiling hot water for 3-5 minutes. Plunge into ice-cold water. 

In a large bowl mix together all the salad ingredients.

In a small bowl, whisk together all the vinaigrette ingredients. 

Drizzle vinaigrette over the salad and toss.
