Gourmet Mini Pizzas

Serves 2-4

Time 20 minutes

Ingredients

4 mini tortillas 

 

¼ cup tomato passata 

6 whole mushrooms, marinated in vinaigrette, sliced  

¼ cup roasted pepper strips 

50g salami, sliced into matchsticks 

50g mozzarella 

 

To serve

1 stem basil, leaves picked

Method

Preheat the oven to 250C on the fan-forced grill function.  

Place tortillas on a lined baking tray. 

Spread passata over tortilla’s, top with mushrooms, capsicum strips, matchsticks and mozzarella. 

Place in the oven and cook for 5-10 minutes or until the base is crispy and the cheese has melted.
