Maltese Tuna Pie

Serves 6

Time 1 hour 30 minutes

Ingredients

1 onion, finely diced

3 cloves garlic, diced

2 tbsp extra virgin olive oil
2 x (185g) cans tuna in oil

2 potatoes, boiled with skin on

1 punnet cherry tomatoes 

1 jar green olives, pitted

2 cups green peas

1 bunch basil

1 bunch parsley, roughly chopped

Salt & pepper 

1 packet kataifi pastry

5 tbsp melted butter

Method

Preheat the oven to 200C. 

Boil the potatoes with their skins on, set them aside to cool. Saute the onions and garlic in extra virgin olive oil until they have caramelised. 

Tear the potatoes into a dish, roughly mash with a fork. Add the sauteed onions and garlic to the potatoes. Add tuna, tomatoes, olives, basil, parsley, salt and pepper and stir through. 

Top the pie filling with kataifi pastry. Generously brush with butter. Place the pie in the oven and cook for 45 minutes or until the pastry is golden brown.
