Bacon, & Cheese Scones

Serves 6

Time 40 minutes

Ingredients

2½ cup self-raising flour

1½ tsp baking powder

½ tsp baking soda

Pinch salt

¼ tsp cayenne pepper

½ cup (cold) butter cubed, may do room temp to make faster

1 cup cheddar cheese shredded

1 onion, sliced and caramelised

150g bacon, shredded

200ml sour cream

¼ cup cooking cream

⅓ cup soda water

Method

Preheat your oven to 200°C 

Mix dry ingredients together and then rub in the butter. Add in the cooking cream and sour cream, and the soda water, then mix around and make into a shaggy dough. Dust with flour if sticky.

Roll out onto a flour-dusted board, knead until it comes together and then roll the dough thick and flat. 

Add cheese, bacon and onion into a bowl and mix together, then add on top of the dough. Roll it into a log with the fillings on the inside, then cut into little scrolls.

Place on a baking paper-lined tray and brush with extra cream.

Bake for 12 to 15 mins until golden.

Serve with lashings of butter and bacon jam.
