Baked Cinnamon Peanut Butter Bites

Serves makes 12

Time 30 minutes

Ingredients

2 free-range eggs 

3 tbsp extra virgin olive oil 

3 tbsp peanut butter 

¼ cup coconut sugar 

1 tsp vanilla extract 

1 tsp ground cinnamon 

1 ½ tsp baking powder 

⅓ cup arrowroot flour (tapioca flour)

½ cup almond meal 

¼ cup desiccated coconut 

Peanut Butter Cinnamon Glaze

2 tbsp peanut butter 

1 tbsp maple syrup 

2 tsp nut milk 

Ground cinnamon, to garnish

Method

Heat oven to 170°C and line a large baking tray with greaseproof paper. 

Add eggs, extra virgin olive oil, peanut butter, coconut sugar, vanilla, cinnamon and baking powder to a bowl and whisk together. Add arrowroot flour, almond meal and desiccated coconut. 

Scoop 1 tbsp measures onto the baking tray, spacing 2-3 cm apart. Bake in the oven for 8-10 minutes. 

Once cooked, cool on the tray for 20 minutes then transfer to a wire rack. 

Make the glaze by whisking together the peanut butter, maple syrup, and nut milk in a bowl. 

Once the puffs have cooled slightly, spoon the glaze over the top of each puff then sprinkle with more cinnamon to finish.
