Portuguese Chicken

Serves  4

Time 45 minutes plus marinade overnight or for the day

Ingredients

1 whole chicken

Marinade

¼ cup extra virgin olive oil, robust flavoured

2 tsp dried oregano

2 tsp crushed chilli paste

1 tbsp sweet paprika

1 tbsp hot paprika

1 tsp salt flakes

Juice of a lemon

1 tbsp honey

To Serve

Roast potatoes

chargrilled corn

mixed salad

Method

Whisk together all the marinade ingredients in a bowl. 

Butterfly the chicken by cutting along the backbone and flattening the bird. Cut out any excess skin and fat around the neck. 

Pour over the marinade, cover and leave in the fridge overnight or for the day ready to cook that night. 

Heat the oven to 180°C. Roast the chicken for 40-45 minutes or until cooked through.

Serve with roast potatoes, chargrilled corn and a mixed salad.
