Serves 6-8

Ingredients

250g softened unsalted butter
2½ cups brown sugar
4 eggs
4 mashed ripe bananas
1 tsp vanilla
500g self-raising flour
2 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
270ml coconut cream

One banana roughly chopped, or layer coconut on top

Method

Preheat the oven to 180°C fan-forced.  


Add all ingredients to a food processor and blitz until the ingredients have come together as a smooth batter. 

Pour into a cake tin, add the slices of banana (or coconut) and bake for 45 minutes – 1 hour (or until a fine skewer inserted comes out clean).

Cool on a wire rack in the tin for 30 minutes. Dust with icing sugar to serve.
