Creamy Vegan Pesto Pasta

Ingredients

1 packet ready cooked pasta 

 

Creamy Pesto

¼ cup vegan pesto 

1 cup plant-based milk 

1 tsp tapioca starch 

 

To serve

1 tbsp nutritional yeast 

1 bunch fresh basil 

1 lemon, juiced

Method

Use a whisk to combine pesto, plant-based milk and tapioca starch. Warm in a pot to thicken. Cook your pasta, following packet instructions and stir through the sauce.
Top with nutritional yeast, fresh basil and a squeeze of lemon juice.
