Curry Spiced Yoghurt Rice

Serves 1-2

Time 5 minutes

Ingredients

1 packet coconut basmati rice

½ cup yoghurt

3 tbsp milk

2 tbsp extra virgin olive oil 

1 tsp brown mustard seeds

2 stems curry leaves

1 red chilli, chopped

Method

Prepare the rice in the packet in the microwave – allow it cool on a plate after. Pour into a bowl when cool and combine with yoghurt and milk. Season this with salt if desired and pepper.

In a small fry pan heat olive oil, add the mustard seeds and curry leaves and chilli and cook until fragrant – for 1 minute.

Divide the rice into bowls, top with the fried mixture and serve.
