Easy Sour & Spicy Potato Balls

Serves 4

Time 30 minutes plus 1 hour refrigeration

Ingredients

600g cooked potato  

120g corn flour 

100g garlic, chopped

80g dried chilli flakes

50g red long chilli, sliced 

½ bunch spring onion, sliced 

60g white sesame seeds 

200ml extra virgin olive oil 

75ml black vinegar 

100ml light soy sauce 

50g caster sugar 

100ml oyster sauce 

Method

Mash the potato thoroughly before adding the corn flour. Shape the potato dough into small balls and allow to rest for at least 1 hour in the fridge. 

In a large pot of boiling water cook the potato balls until firm before chilling them down in ice water and then drain off.

In a large metal bowl, add your garlic, spring onion, chilli, dried chilli and sesame seeds and then cover with your hot olive oil. 

Once cooled a little, add your vinegar, soy sauce, sugar and oyster sauce and give a good mix before adding your cooked potato balls.
