Apple Granola Crumble

Serves 4

Time 35 minutes

Ingredients

4 granny smith apples, cored, skin left on and diced

½ tbsp mixed spice 

2 cups nutty granola

¼ cup extra virgin olive oil 

Custard or Greek yoghurt, to serve

Method

Preheat the oven to 180°C.

Brush your baking dish with extra virgin olive oil and add the apple and mixed spice, stirring to combine. 

Place the granola in a plastic bag and bash with a rolling pin to make the crumble. Tip into a bowl and mix with the extra virgin olive oil. 

Tip the crumble over the top of the fruit and spread over evenly. Bake for 30 minutes or until the edges are browned and a little crispy. 

Serve with custard or Greek yoghurt.
