Sweet Potato Walnut Brownies

Serves makes 16

Time 30 minutes plus cooling

Ingredients

1 cup steamed and mashed sweet potato (250g cooked weight)

3 tbsp extra virgin olive oil or melted coconut oil

1 tsp vanilla

1 tsp ground cinnamon

pinch salt

3 eggs, lightly beaten

¼ cup maple syrup

¼ cup coconut flour

½ cup raw cacao powder

3/4 cup walnut pieces (optional)

½ - ¾ cup chopped dark chocolate 

Method

Preheat oven to 180°C. Whisk together coconut oil, vanilla, cinnamon, salt, eggs and maple syrup. 

Add coconut flour, sweet potato, raw cacao and dark choc chips and mix until well combined.

Place in lined baking tin and pop the oven for 25 minutes, cool in tin for 30-40 minutes then slice and serve.
