Ginger Sesame Tofu

Serves 4-6

Time 30 minutes

Ingredients

400g extra firm tofu, cut into cubes 

2 tbsp coconut oil

300g slab bacon, rind removed and cut into lardons

500g chicken mince

4 spring onions, cut into batons 

1 cup green beans, cut into batons

1 red onion, thinly sliced

1-inch ginger, peeled coarsely sliced into matchsticks 

4 cloves garlic, roughly chopped

2 long red chillies, sliced  

1 bunch garlic chives, cut into batons

2 tbsp sesame seeds (untoasted)

1 tbsp red wine vinegar

1 tsp sesame oil

1 tbsp soy sauce

1 tbsp cornflour + water 

Method

Melt the coconut oil in a pan, and add the cubes of tofu to brown off. Add the bacon rind to render the fat down, this will add additional flavour to the tofu. Add in the bacon lardons, chicken mince and season with salt and pepper, then toss through.

Heat another large frypan on medium-high heat, and add the onion, chillies, garlic and ginger. Add the sesame seeds and the olive oil, toss through to toast everything off.

Add in the beans, then season with salt and pepper. Add in the red wine vinegar and, soy and sesame oil. Add in the meat mixture and toss through to combine, then add the cornflour slurry to thicken the sauce. Toss again, then add the spring onions and garlic chives.
