Ingredients

1 store-bought roast chicken, meat removed from bones

½ cup pickled carrot, julienned 

½ cup pickled daikon 

3 baby cucumbers, cut into strips 

¼ bunch coriander

2 spring onions, finely chopped

2 tbsp Hoisin sauce

1 tbsp dark soy sauce

2 tbsp mayonnaise

2 tbsp sweet chilli sauce

4 Vietnamese baguettes

Method

Spread mayonnaise on the base of your roll, add chicken, pickled daikon and carrot, cucumber slices. Drizzle the soy, sweet chilli and hoisin sauces on top. Add sprigs of coriander and spring onion.
