Prawn and Egg Fried Rice

Serves 4

Time 15 minutes

Ingredients

1 red onion, finely diced

2 tbsp extra virgin olive oil

20g butter

100g bacon, finely diced

4 cloves garlic, microplaned

1 long red chilli, finely sliced

4 eggs, beaten

200g prawn meat

¼ tsp dried chilli flakes

½ tsp brown sugar

1 cup frozen peas

2 cups cooked rice (day-old rice is best)

4 spring onions, finely chopped

½ bunch coriander, finely chopped

2 tbsp soy sauce

Method

Add the olive oil and onion to a large frypan and sweat off until softened. Add the butter and bacon and toss to combine. Add the garlic and chilli and stir.

Turn the heat to medium, and add the eggs. Scramble with a spoon and add the prawns right before the eggs are fully cooked, then the chilli flakes and sugar.

Add the peas to the pan and season with salt and pepper, then add in the rice, coriander, spring onions and soy sauce. Toss everything together to combine and serve hot.
