Pear and Rhubarb Crumbles
Serves 4-6

Ingredients
4 pears, peeled and roughly chopped
4 sticks of rhubarb, chopped
1 vanilla bean, split
2-3 cups of water
1½ tsp ground cinnamon
½ cup plain flour
½ cup oats
½ cup golden raw sugar substitute
⅓ cup desiccated coconut
80g butter, chopped – and slightly soft
Cream or ice cream, to serve
Method
Preheat the oven to 180 degrees.
Bring the water to boil in a small pot and add pears, rhubarb, vanilla bean and 1 teaspoon of ground cinnamon and allow this to gently simmer for 20 – 30 minutes until the fluid reduces and you have a thick mixture.
Whilst this is simmering – combine the flour, oats, and sugar in a bowl. Sprinkle the remaining cinnamon. Add the butter and using fingers combine the ingredients together so they become like breadcrumbs.
Once the fruit mixture is done place this into small ramekins – fill ¾ of the way and place the crumble on top.
Place in the oven for 30 minutes until golden on top and serve with a dollop of cream or ice cream on top!
