Halloumi Pearl Couscous Salad

Serves 6

Time 20 minutes

Ingredients

1 tbsp extra virgin olive oil
200g pearl couscous
2 cups vegetable broth
1 bunch asparagus spears
1 block halloumi cheese
1 bunch basil
1/2 cup pea shoots
⅓ cup cranberries
Salt & pepper
1 lemon, juice
2 tbsp extra virgin olive oil

Method

In a pan fry pearl couscous off for 2-3 minutes. Add stock and cook following packet instructions.
In a grill pan cook asparagus and halloumi with a drizzle of extra virgin olive oil until browned.
Allow couscous to cool, before pouring onto your serving dish. Top with pea shoots, basil leaves, halloumi, asparagus and cranberries. Squeeze over lemon juice with a drizzle of extra virgin olive oil and season to taste.
