Huli Huli Chicken

Ingredients
Chicken
¼ cup extra virgin olive oil
1 whole chicken, butterflied
Salt & pepper
Lime, to serve
Glaze
1 clove garlic
1-inch ginger
¼ cup mirin
¼ cup rice wine vinegar
¼ cup black vinegar
1 tbsp Worcestershire sauce
¼ cup honey
¼ cup brown sugar
1 cup crushed pineapple
¼ cup tomato sauce
3 tbsp light soy sauce
½ tsp sesame oil
Hawaiian Salsa
⅓ pineapple, diced
1 orange, peel removed and diced
4 baby cucumbers, diced
3 spring onions, diced sliced
1 tsp light soy sauce
2-3 drops sesame oil
1 red chilli, diced
1 green chilli, diced
½ bunch coriander, diced
Salt & pepper
1 tbsp extra virgin olive oil
Method
Preheat the oven to 180°C.
Score the chicken breast and thighs, place in a lined baking tray breast side up. Season with salt, pepper and olive oil.
Combine all of the ingredients for the glaze. Pour the glaze over the chicken. Cook in the oven for 55-60 minutes or until the chicken is cooked.
Combine all of the ingredients for the salsa and stir together.
Transfer the chicken to a serving plate, top with salsa and squeeze over lime juice to serve.
