Layered Mexican Dip

Serves 6

Time 20 minutes

Ingredients

Salsa

4 tomatoes, finely chopped 

1 green jalapeno, diced 

1 small red onion, diced 

1 tbsp apple cider vinegar

Salt & pepper

1 tbsp extra virgin olive oil

 

Guacamole

2 large ripe avocados, pitted and peeled

2 tbsp Greek yoghurt 

1 tbsp extra virgin olive oil

1 lime, juice

1 pinch chilli flakes

 

Sour Cream Layer 

2 cups sour cream 

1 lime, juice 

 

1 cup cheddar cheese, grated 

1 green jalapeno

½ cup pitted black olives, sliced

2 tbsp fresh coriander, chopped

 

Serve

Corn chips

Vegetable crudités

Method

Mix all the salsa ingredients together in a bow. 

Make guacamole by mashing the avocados, yoghurt, lime and olive oil in a bowl together. Add in the chilli flakes to taste. 

Get a dish for the layered dip. Then cover the base with all the salsa first, then cover that with the guacamole.

Add the sour cream layer. 

Sprinkle with cheese, olives and jalapenos.
