Whole Roasted Cauliflower with Spicy Cashew Dukkah

Ingredients

1 cauliflower 

Splash water 

1 packet spicy cashew dukkah with turmeric 

3 tbsp extra virgin olive oil 

 

To serve 

1 bunch parsley, chopped

Method

Preheat the oven to 190°C. 

Place a splash of water in the bottom of the tray. Pour olive oil over the cauliflower and rub the dukkah over the cauliflower. Place in the oven and bake for 30-40 minutes. 

Sprinkle with freshly chopped parsley to serve.
