Matcha Muesli Balls

Serves makes 12

Time 5 minutes plus refrigerating and setting

Ingredients

½ cup toasted muesli 

1 cup raw cashews

3 tsp ceremonial grade matcha powder

½ cup pitted dates 

¼ cup coconut milk 

2 tbsp coconut oil 

¼ cup desiccated or shredded coconut for coating

Method

Add toasted muesli and cashews to a food processor and blitz to form a crumb, then add matcha, dates, coconut milk and coconut oil and blitz until uniform in texture.

Scoop into a bowl and refrigerate for 30 minutes. Measure 1.5-2 tbsp portions, roll into a ball and then roll through desiccated coconut.

Repeat with the remaining mixture. Ideally, set in fridge for another 3-4 hours before serving.

Eat and store in fridge for up to 2 weeks.
