Pistachio Gelati Sandwich with Almond Cookies

Ingredients
500g pistachio gelati (about 4 scoops, softened slightly)
8 almond cookies (store-bought or homemade, about 8-10 cm diameter)
2 tbsp finely chopped pistachios (for garnish)
1 tbsp honey (optional, for drizzling)
Method
Place four almond cookies on a lined tray. Scoop a generous portion of pistachio gelati onto each cookie base, spreading slightly to cover the cookie surface.
Top each gelati-topped cookie with another almond cookie, pressing gently to form a sandwich. If desired, roll the edges of each sandwich in chopped pistachios for extra texture and flavour.
Arrange on a serving plate, drizzle lightly with honey if desired, and serve immediately or freeze briefly to firm up.
