Next Level Roast Pumpkin

Serves 4

Time 35 minutes

Ingredients

4 cups butternut pumpkin, unpeeled and diced into 2 cm cubes

⅓ cup golden syrup

1 tbsp dried Italian herbs

1 tbsp ground cumin

1 tsp salt

½ tsp black pepper

2 tbsp extra virgin olive oil

Method

Preheat oven to 200°C.

Place all ingredients into a large bowl and toss until well combined. 

Place onto a lined baking tray and roast in the oven for 25-30 minutes or until soft and caramelised.
