Red Pepper Stuffed with Tomato & Basil Tuna

Ingredients
2 red capsicums, halved lengthwise seeds removed
Tuna & Rice Filling
2 x (95g) can tuna chunky tomato & basil
250g rice, cooked
½ zucchini, finely chopped
1 punnet cherry tomatoes, halved
½ red onion, finely diced
1 tbsp oregano, leaves torn
½ cup cheese, grated (plus a little extra for the top)
50g goats cheese
Salt & pepper
1 tbsp extra virgin olive oil
Method
Preheat the oven to 180C.
In a bowl gently mix all of the tuna and rice filling ingredients together. Spoon the mixture into the capsicums, top with extra grated cheese.
Place in the oven on a lined baking tray and bake for 20-25 minutes or until golden.
