Richo’s Protein Packed Breakfast Sandwich

Serves 1

Time 20 minutes

Ingredients

2 slices of sourdough bread, fried in olive oil until golden brown

200g minute steak

3 eggs

2 rashers bacon

½ avocado, sliced

½ tomato, sliced

1 tsp mayonnaise

2 tbsp butter

Salt and pepper

Extra virgin olive oil

For the Mushrooms

2 tbsp extra virgin olive oil

75g butter

200g button mushroom, sliced

½ brown onion, sliced

2 garlic cloves

½ bunch of thyme

½ bunch of rosemary

Method

Heat a pan on medium heat. 

Add the onion and cook with oil until it’s translucent, then add garlic, mushroom, garlic, rosemary, thyme. Add the butter, cook until nice and soft, season. 

Heat butter in another pan on low heat. Add the bread and toast for 2-3 minutes on each side or until both sides are crispy and golden brown. Set aside.

Fried bacon, steaks and eggs to your liking, season and set them aside. Arrange the sandwich with one slice of bread, followed by avocado, steak, bacon, mushrooms mixture, tomato slices and eggs. 

Spread mayonnaise on the lid bread and place the lid on.

Serve and enjoy.
