Tuna Sushi Bake

Serves 4-6

Time 30 minutes

Ingredients

1½ cup sushi rice 

1½ tbsp sesame oil

1½ tbsp mirin

Nori sheets

2 avocados, peeled and sliced

2 cucumbers, cut into strips

¼ cup kewpie mayonnaise

2 tbsp sriracha 

Furikake seasoning

1 large can tuna in olive oil - drained

½ red onion, finely diced; like Richo would do it, not me!

Method

Preheat oven to 180°C. 

Cook sushi rice according to packet instructions. When done, drain and combine mirin and sesame with the rice and stir through.

In a bowl combine the tuna, diced onion, kewpie mayonnaise and a handful of spring onion and mash together.

In an oven tray place a packed layer of sushi rice.

Top with the tuna mixture and then place a generous drizzle of kewpie and sriracha on top if desired. Sprinkle the furikake seasoning (can use sesame seeds if easier, also an allergy food so great for kids and solids introduction).

*Some people bake the avocado – I prefer it cold to contrast, up to you.

Allow this to heat gently in the oven for 12-15 minutes then remove.

Whilst this is in the oven prepare the avocado, cucumber, and spring onion.

To serve – take ripped nori sheets and spoon the mixture from the pan into this, add avocado, cucumber, and spring onion and enjoy.

This is SO yummy, SO easy and SO incredibly fun for kids (because they make a huge mess and stink like tuna after!).
