Spaghetti Vongole

Serves 5

Time 30 minutes

Ingredients

500g spaghetti 

½ cup extra virgin olive oil

3 garlic cloves, chopped finely

1 bunch flat leaf parsley, chopped finely (stalk too)

500g fresh vongole (cockles), washed & strained

Salt & pepper

Method

In a pot of boiling salted water, cook pasta per packet directions.

Heat olive oil, garlic and parsley in a large pan on medium heat and cook for 3 minutes. Stirring occasionally and making sure garlic doesn’t burn.

Next add cockles to the pan, toss through and cook for 2 minutes.

Add 1 cup of pasta water into pan and place the lid on. Steam vongole until they pop open.

Once vongole open, remove lid and reduce heat to soft simmer. Strain pasta and add to pan.

Toss through pasta and add salt & pepper to taste.

Serve and enjoy with family and friends!
