Spiced Yoghurt Marinated Blue-Eye

Serves 4

Time 30 minutes + 4 hours marinating time

Ingredients

700g blue eye fillet, skin removed, cut into bite-size pieces 

 

Spiced Yoghurt Marinade

500g Greek yoghurt

1 tsp sea salt flakes

1 small knob turmeric, minced

¼ tsp ground cloves

1 knob fresh ginger, minced

5 cloves garlic, minced

1 brown onion, grated, juice strained 

1 tsp ground coriander 

1 tsp ground cumin seeds

4 spring onions, thinly sliced

1 lemon, juiced

2 small green chillies, finely diced 

3 tbsp extra virgin olive oil 

 

Salsa

2 tomatoes, diced 

3 baby cucumbers, diced

½ red onion, finely diced 

1 long red chilli, finely diced 

1 bunch coriander, finely diced 

2 spring onions, finely diced 

1 tbsp sesame seeds, toasted

Salt & pepper

 

Dressing

2 lemons, juiced 

1 lime, juiced

3 tbsp extra virgin olive oil

 

Spring onion, thinly sliced, to garnish

Method

Combine all the ingredients for the marinade, then add the fish. Marinate for at least 4 hours. 

Preheat oven 210°C fan-forced. 

Transfer the fish to your baking tray and drizzle with additional extra virgin olive oil. Bake for 15 minutes. While the fish is cooking, prepare the salsa. 

Combine all of the salsa ingredients in a bowl. Stir through the dressing just before serving. 

Serve the fish with spoonfuls of the sauce and a generous serving of salsa. Garnish with slices of spring onion.
