Spicy Lime Tofu Skewers

Serves 2

Time 30 minutes + marinating time

Ingredients

1 block firm tofu 

1 small zucchini chopped into semi-circles

½ red onion, chopped into pieces that can be threaded onto a skewer

1 red capsicum, chopped into similar sized pieces as onion

1 yellow capsicum, chopped into similar sized pieces

1 cup cherry tomatoes

 

Tofu marinade

Juice of 2-3 limes

1 tbsp soy sauce

3cm piece ginger, peeled and minced

2 garlic cloves, crushed

1 tsp honey

Lime zest

2 tbsp avocado oil 

1 tbsp hot chilli sauce

Method

On a plate lined with a paper towel place the tofu block, cover with a paper towel, another plate on top and microwave for 3 minutes to take excess fluid out of the tofu. 

Soak skewers in water if using wooden or bamboo ones. 

Combine the ingredients for the marinade in a bowl. 

Chop the tofu into cubes and place in the marinade and set aside ideally for 1-2 hours to marinate.

Prepare vegetables by chopping the capsicums and red onion into similar pieces.

Construct the skewers by alternating tofu with vegetables and brush with the additional marinade so the vegetables are also slightly covered.

Turn on the grill and grill skewers turning so all sides are covered for approximately 8-10 minutes.
