Texan Slow Cooked Beef Ribs

Serves 6

Time 4 hours

Ingredients

2kg beef short ribs

Marinade:

250g bbq sauce

1 cup brown sugar

10 cloves garlic, chopped

3 tbsp light soy

3 tbsp dark soy

1 knob of ginger, cut into strips

3 stalks spring onion

2 long red chili, roughly chopped

250ml beer

150ml beef stock

Salt and pepper

Method

Combine all of the ingredients for the marinade. Pour the sauce over ribs and rub in, marinade overnight.

Place in an oven dish, cover with baking paper and aluminum foil.

Put in the oven at 160°C and cook covered for 3 to 4 hours, covered with baking paper and foil then remove cover, and baste the ribs with the glaze.

When the meat is tender and cooked, turn the oven up and cook at 190°C for 30 minutes, until glazed.

Serve with greens and enjoy!
